Leftovers

Leftovers might just be the greatest treasure in any fridge. 


You can throw almost any leftovers in to a toastie, an omelette or in top of a pizza or baked potato and call it a meal.


One of our favourite ways to use roast dinner leftovers is to puts left over roast,covered in gravy, covered in chopped roast potatoes, sprinkle with cheese and oven bake.


A fancy poutine of sorts and a very yummy meal.

This is what's important


It's a quiet time, these last few days before the holidays officially end and the world picks up pace again. 

It's not actually quiet in our house. With the hooting of hatchlings and the TV on in the background.

We didn't always have the TV on. For the larger part of our first hatchlings life, we didn't have a TV at all. It's one of those concession that have come with having children with additional 

needs. Sometimes, being the perfect parent that I hoped to be, isn't the parent that my children need me to be.

Anyways, there is little in the way of a peaceful Saturday. There is a cold clean frost outside on the fields. And the wind is low enough that the sea is gently rolling without too much enthusiasm.

 I hope so much to focus more this year on our family - there is nothing else more important.

Hatchling no 8

 


We have a new character, our 2019 born hatchling who perhaps, should be introduced.

This goregous little lady came into our lives both healing and challenging our hearts. 

This little hatchling with her infectious smile and her fierce resilience has been the joy we needed and we are so incredibly blessed.





A new year

 


It has been a long time since I last wrote on this blog. Tragedy struck our family and it has taken me a long time to figure out if I could continue writing this blog that had been all about hope.

Part of the change, the positive change is my husband no longer works away for extended periods. The entire reason the blog was started was to chronicle family life for him.


Still, I miss having this family diary. This photo album of sorts.

I have tried starting other blogs and ultimately, I am ready to start a new but I want to continue this same thread.

And here we are on the last moments of 2020, ready to begin blogging again.

I was good at blogging once


Honestly. 

I did okay, at least. 

But every time, hatchling no7 ends up in hospital, it feels nearly impossible. 

And I loose a month, as the hole that was blown open by her being ill.

It takes time to heal enough to be happy. To feel allowed to feel happy. 

So here we sit, waiting for our wee warrior hatchling get back to being her best. 

Then hopefully we can get home and make some happier memories.
